Description of Work
The Food Service Assistant safely prepares and serves nutritional meals for the day and dorm ENCSD students & staff according to state and federal guidelines. Assures that written physician diet orders/food allergy orders are followed at all times. Sets up and clears approved catering functions for special school events.

Knowledge Skills and Abilities/Management Preferences
Assist and monitor the preparation and serving of food in accordance to state and federal food safety and sanitation (HACCP) guidelines.
- Wash and peel fruits and vegetables for the daily menu and production record plan.
- Wash, peel and portion fruits and vegetables for salad and potato bar assignment sheet.
- Correctly portion and attractively serve assigned menu items from the tray line.
- Prepare, count, serve and document milk served for each meal according to variety chosen.
- Prepare, count, serve and document all menu items served per meal on the serving line or in the dining room.
- Serve meals at safe temperatures according to the Production Record Plan.
- Properly rotate (FIFO) and restock canned goods and supplies in the dry storage areas.
- Prepare, serve and/or deliver catered food items to various school event locations.
- Prepare and/or deliver boxed meals or bagged lunches for athletic events and field trips.
- Cool, store and properly document exposure times and temperatures for all leftover foods maintained for reuse.
- Monitor others and assure that food thermometers are calibrated correctly daily.
- Monitor documentation of when foods were cooked (time), internal temperatures, quantity prepared, quantity of leftovers, for foods served at each meal on the tray line.
- Replenishes and monitors sanitation of the daily self-serve salad bar items.
- Removes items from the freezer for thawing as assigned; follows food safety thawing guidelines.
- Assures all foods served are within an acceptable expiration or shelf life date.
Maintains a clean and well organized work area per state and USDA federal food safety and sanitation guidelines.
- Pre-wash, wash, rinse, sanitize and air dry all pots, pans, dishes, trays and utensils by hand or by dish machine. Uses proper water temperatures, detergents and water pressures.
- Clean and properly sanitize serving line, all countertops, food transport carts, warmers, kitchen equipment and food prep areas before and after each use.
- Clean, sanitize and air dry dining room floors, tables, chairs, salad bar stations, window sills, microwaves, and doors after each use.
- Sweep and mop kitchen floors.
- Clean and service grease traps and properly dispose of collected grease in grease recycle bin.
- Take out trash as needed or after each meal, wash all trash receptacles and replace with new trash liner.
- Keep loading dock and dumpster area clean and tidy. Dumpster lid is closed at all times.
- Completes cleaning schedule assignments: maintains and thoroughly cleans equipment, coolers, freezer, storage shelves, kitchen drawers, chemical closet, storeroom, and restrooms.
- Breaks down, removes, and recycles all cardboard for pest control.
- Assist in other work areas as needed or assigned by supervisor.
- Assists, cooks and prepares food items following standardized recipes as needed or during staff shortages, disasters or emergencies.
- Performs related duties and special assignments as assigned by supervisor.
Minimum Education and Experience

Education and/or experience in food service that is directly related to the job and consistent with accepted practices of the trade.
Experience in ASL highly encouraged to apply.
